In Joetta's Family Recipe Book, you'll find my favorite recipes. I don't know where I got all of them. Some have been around my kitchen for a long, long time. I don't create recipes.  That's not my talent.  If I don't like something that's in it, I just take it out or substitute.  But most of the time, I like the recipes just the way they are.  I get my recipes from family, friends, co-workers, magazines, internet, etc... You might just recognize one of your favorite recipes on my website.

    

Joetta's Penne Rustica 

 

1 bag of penne pasta

1 jar of Sun-dried Tomato Alfredo sauce

         (Classico Brand)

1 package of hickory smoked bacon

2 large cans of white & dark chunk chicken

1 tub of freshly shredded Romano cheese

1 jar of chopped pimento

a couple of fresh sprigs of fresh rosemary

1 onion chopped

                                                                              1 tbsp chopped garlic

 

Boil water for pasta.  Cut bacon into 1 inch squares then start frying bacon and chopped onion.  When water starts to boil, Add Pasta and Rosemary then return to a boil – continue for 10-12 min. (till al dente).  When bacon is just about done (between soft and crisp) add both cans of chicken, pimento and garlic.  Reduce heat to simmer.  Drain pasta and put in large deep serving dish.  Add Tomato Alfredo sauce straight from the jar to the pasta.   Use slotted spoon to remove bacon mixture from frying pan and add to pasta.  Stir pasta to coat.  Top with Romano cheese. 

I like a light sweet California Chardonnay or a semi-sweet to sweet German Reisling. 

My preference is Falkenburg Riesling Auslese.  It's around 10 bucks and is comparable to the 80 dollar a bottle I like.

 

     

 

 

Toasted Cheese Pita Chips

 

  • 3  Pita bread rounds
  • 3 T of melted butter
  • 3  T grated Parmesan or Romano cheese
  • Black Pepper

Split pita bread in half.  Brush the inside of the pita with butter.  Cut Pita into wedges.  Spread on baking sheet.  Sprinkle with cheese and a little bit of black pepper.  Bake in a 350 degree oven about 10 min until crisp. 

This recipe came from a 5 ingredient cook book my mother gave me one Christmas.

 

 

 

 

 

 

 

White Chocolate Pound Cake with Fresh Strawberries

 

This is one of those "cheater" from scratch cakes.  Found the recipe in the Cake Mix Doctor cook book. 

  • Spray oil for misting pans
  • Flour for dusting pans
  • 1 box plain white cake mix
  • 6 ounces white chocolate coarsely chopped
  • 8 T (1 stick) melted butter
  • 1 cup whole milk
  • 3 large eggs
  • 1 t pure vanilla extract

 

Place rack in center of oven, lightly mist three 8 inch loaf pans with veg oil spray, then dust with flour.  Set aside.

Heat the chopped white chocolate in smal saucepan over low heat until melted, stirring constantly.  Set aside to cool slightly.

Place cake mix, melted butter, milk, eggs, vanilla and slightly cooled white chocolate in a large mixing bowl.  Blend with electric mixer on low for 1 min.  Increase mixer to medium and beat 2 min. more.  Divide batter evenly amoung the prepared pans. 

Bake the loaves until they are light brown and spring back when lightly pressed with your finger, 40 - 45 min.  Remove pans and place on wire racks to cool for 10 min.  Run knife around the edge of loaves and invert them onto racks.  Cool for 35-40 min. before serving.
